Sometimes it’s nice to have something homemade, full of flavour and yes a little bit naughty on the calories!

Halloumi and Mushroom Burger

Delicious vegetarian burger, you will love every bite. Full of flavours, very filling, still has lots of sneaky vegetables and a great treat for the weekend. Of course I had to just have a little cocktail to go with it, which happens to be a chocolate cherry espresso martini !

  • Halloumi
  • Mushrooms
  • Wild garlic pesto (see recipe)
  • Tomato chutney
  • GF roll
  • Carrot
  • Cabbage
  • Potato
  • Mayo

1) Chop potato into chips, add oil and thyme and cook in oven 180C for about 40 minutes

2) Whilst the chips are cooking make the slaw, so grate the carrot and thinly shred the cabbage, add a little mayo

3) Slice and fry the mushrooms, with the pesto, until cooked

4) Spread the tomato chutney on one half of the bun and wild pesto on the other half

5) Once chips are almost cooked, add the halloumi to the frying pan and heat for a minute on each side

6) Construct the burger with bun, mushrooms, halloumi and slaw. Serve
